2 slices of bacon
1 pound of ground beef
1/2 cup chopped onion
1 can tomatoes (about 1 lb.)
1 8 oz. can tomato sauce
1 tablespoon chili powder
1 teaspoon salt
1 package corn-muffin mix
Saute bacon until crisp; drain on paper towel, then crumble. Pour off all drippings; measure 2 tablespoons and return to pan.
Mix ground beef lightly with onion. Brown meat. Stir in crumbled bacon, tomatoes, tomato sauce and seasonings; heat to boiling.
Prepare corn-muffin mix, following label directions for muffins. Spread half of batter evenly over bottom of a greased shallow 6-cup baking dish; spoon hot meat mixture over; drop remaining batter by tablespoonfuls on top.
Bake at 375* for 35 minutes or until top is puffed and golden brown.
Yield: 6 servings
Recipe is from Gramma's sweet friend Nelda
*We used sausage instead of ground beef, rotel instead of tomatoes and added a few other spices!
Everyone loved it and decided it is one of those "keeper" recipes!
